Mini lemon ginger tiramisu

Ingredients

  • 6 savoiardi (ladyfingers biscuit)

Cream filling

  • 55g mascarpone cheese
  • 1/8 cup granulated sugar
  • 2 tsp coconut milk
  • ½ cup whipping cream + 1 tsp sugar
  • ½ tsp freshly grated ginger
  • ½ tsp lemon zest

Lemon sauce

  • 1/4 cup lemon curd
  • 1/4 cup coconut milk

Steps

  • Beat the whipping cream with little sugar until stiff peaks.
  • Mix in lemon zest and grated ginger and keep it aside.
  • In a separate bowl, mix mascarpone cheese, sugar and coconut milk.
  • Fold in the whipped cream.
  • For lemon sauce mix lemon curd and coconut milk and keep it aside.
  • Dip the ladyfingers in the lemon sauce and layer them in a 4" springform pan.
  • Layer the cream filling, about ½" thick.
  • Repeat the ladyfingers and cream filling layer.
  • Drizzle the lemon sauce on top to create a thin layer.
  • Garnish with lemon peel and chill overnight.
