Ingredients
- 6 savoiardi (ladyfingers biscuit)
Cream filling
- 55g mascarpone cheese
- 1/8 cup granulated sugar
- 2 tsp coconut milk
- ½ cup whipping cream + 1 tsp sugar
- ½ tsp freshly grated ginger
- ½ tsp lemon zest
Lemon sauce
- 1/4 cup lemon curd
- 1/4 cup coconut milk
Steps
- Beat the whipping cream with little sugar until stiff peaks.
- Mix in lemon zest and grated ginger and keep it aside.
- In a separate bowl, mix mascarpone cheese, sugar and coconut milk.
- Fold in the whipped cream.
- For lemon sauce mix lemon curd and coconut milk and keep it aside.
- Dip the ladyfingers in the lemon sauce and layer them in a 4" springform pan.
- Layer the cream filling, about ½" thick.
- Repeat the ladyfingers and cream filling layer.
- Drizzle the lemon sauce on top to create a thin layer.
- Garnish with lemon peel and chill overnight.
